Toasted Banana Bread With Chocolate Ricotta


This lower carbohydrate version of banana bread will still delight, especially with a dollop of chocolate ricotta.

  • 2 cups 320g wholemeal self raising flour
  • 1 teaspoon bicarbonate of soda
  • 1 3 cup 70g brown sugar
  • 100g walnuts roughly chopped
  • 2 eggs lightly beaten
  • 1 cup 250ml fat reduced milk
  • 250g fresh ricotta
  • 3 ripe lady finger bananas mashed
  • 2 tablespoons finely grated dark chocolate
  • pinch ground cinnamon to serve
  • honey to serve

  • preheat oven to 180u00b0c grease and line a 21cm x 9cm loaf pan combine flour bicarbonate of soda sugar and walnuts in a bowl
  • mix eggs milk and banana add to the dry ingredients spoon into pan bake for 45 minutes slice into 4 x 2cm slices reserve the rest and toast under a grill until golden
  • combine the ricotta chocolate and cinnamon place a dollop on the toast drizzle with honey
