Lamb Rack With Ratatouille


Make it a French affair tonight by teaming ratatouille with lamb racks.

The ingredient of Lamb Rack With Ratatouille

  • 1 3 cup canola oil
  • 2 garlic cloves crushed
  • 1 large sprig rosemary leaves removed
  • 4 lamb racks french trimmed 3 cutlets on each see notes
  • 1 punnet cherry tomatoes
  • 1 red capsicum seeded chopped
  • 1 large zucchini halved chopped
  • 1 small eggplant chopped
  • 1 onion chopped
  • 1 1 2 cups tomato puree or passata
  • 2 tablespoons parsley chopped
  • 2 garlic cloves crushed

The Instruction of lamb rack with ratatouille

  • preheat oven to 220c
  • to make the ratatouille combine all ingredients in a large baking dish season to taste cover with foil and bake for 20 mins
  • meanwhile combine oil garlic and rosemary in a shallow dish season to taste add lamb tossing to coat
  • place lamb racks on ratatouille in baking dish continue baking uncovered for a further 15 20 mins until lamb is cooked to taste rest covered for 10 mins before carving serve with crusty bread and other vegetables of choice
